Saving collards

 The collard greens I've had were always a bit bitter. My mother knew all about collards and mustard greens and turnip greens and poke salat. It's probably more correct to use "Polk salad," but the pronouncement is "poke salat." Give a closer listen to Tony Joe White, and you will hear "poke salat," not "polk salad" as written in lyrics. He also gets it right on "down South." Correct is never "in the South." There are four cardinal directions: down South, back East, up North and out West. 

Anyway, saving collard greens.
